Une méthode de biologie moléculaire PCR-RFLP a été développée pour authentifier 7 espèces de baudroie du genre Lophius, en utilisant un fragment de gène du cytochrome b de 566 pb. L'analyse d'une durée de 6 heures est applicable aux poissons transformés, plats cuisinés mais pas aux produits appertisés.
