Le stockfish est un cabillaud étêté, éviscéré, et mis à sécher à l'air libre de février à mai, puis affinée pendant plusieurs semaines en cave sèche et ventilée. Cette tradition de séchage de Gadus morhua est d'origine scandinave.
Une méthode rapide d'identification (PCR en temps réel) de Gadus morhua, seule espèce autorisée en Italie pour la préparation de morue séchée, ou Stockfish est proposée.
La méthode a été testée sur 437 échantillons de stockfish prélevés sur le marché italien : pour 131 échantillons l'ADN extrait n'a pas permis d'analyse. 298 sur 306 des échantillons ont pu être identifiés avec succès.
