Des échantillons fumés ou non de saumon d’Atlantique et de truite arc-en-ciel sont identifiés avec succès par la technique de PCR-RFLP (polymérase chain reaction – restriction fragment length polymorphism) du gène p53 ; les fragments de restriction obtenus avec les endonucléases Eco RV, Hinf I et Taq I montrant un polymorphisme interspécifique.
